Italian waiter in Vancouver

Hello to everyone,i will love to work in Vancouver as a waiter,now i am in Italy.
I have looked to all the web sites and suggestions ,but i think that is impossible to get a "temporary working visa" from Italy,just because i have no sponsor.
what should i do?
I wrote emails to restaurants from "Craiglist to "Jobank.ca" but i understand that is hard to hire someone from oversea.
I have 18 years of hospitality experience,well groomed,speak English and Spanish(of course Italian)but i don't have the key to enter in Canada!!!!
